Delicately crushed and pressed. Fermented in stainless steel with a small portion fermented in a combination of new and older French oak barriques. The juice was adjusted to a specific solids content prior to innoculation. This imparts additional flavors and textures in the final wine. A combination of yeast strains were selected to enhance fresh fruit aromatics and increase complexity and mouthfeel.
